Rachel's 20 Minute Choc Chip Cookies

This super quick and easy recipe makes around 10 medium-large cookies. (by Rachel @myvegandiary87)
200g vegan margarine
100g caster sugar
1 tsp vanilla extract
250g plain flour
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
pinch of salt
150g vegan chocolate chips (Callebaut 811 Chocolate Callets)
1 tbsp soya milk
1. Preheat oven to 180/160c fan. Line two trays with baking paper.
2. Add margarine and both sugars to a large mixing bowl. Sift in flour, baking powder, bicarb. and salt, and beat until combined.
3. Add choc chips, soy milk and vanilla and mix until choc chips are fully incorporated throughout batter.
4. Drop 2 dessert-spoon sized portions of the mix onto the baking trays. Allow plenty of space between each portion, as the cookies will expand while cooking.
5. Bake for around 12 mins, or until golden.
6. Remove from oven and leave to cool on baking trays.
Note. I took my cookies out after 12 mins and they were still very soft, they hardened a little as they cooled down but were still quite squidgy in the middle which I love. If you prefer a crunchier cookie, leave them in for longer. Rachel.
